salmon ~ the best of the west..

Wild salmon from British Columbia is one of the most spectacular seafood products in the world.  I took those words off the B.C. Salmon website..and I'm sure they speak the truth. 


It's that time of the year...when the avid fishermen are bringing in the salmon.  Our friend who happens to be a fishing guide, has generously provided us with a good supply of salmon.  And hubby has been trying out his new smoker...the one the kids gave him for Christmas.  He's quite enjoying his smoked salmon...


 ...better than candy to him!  It's been a bit of an issue trying to decide when to pull out the smoker...since it has to sit out-of-doors and is not supposed to get wet.  We haven't had too many suitable days here this year...with no threat of precipitation.  We finally came up with a plan that works just fine!  The smoker has gone to the farmyard and now sits in the shop...where there is a roof overhead and the  smoke bothers no one.  And since hubby's over there all day anyhow...he can keep an eye on his smoking salmon.  Today he is smoking salmon for some friends who caught their limit at Campbell River last week.  So...if things are smelling a wee bit fishy over here...you know why.


And since the salmon was fresh off the smoker...we enjoyed some for dinner last night.  Tortellini with smoked salmon and a herbed cheese sauce...superb!  Though I love salmon...I really don't enjoy cooking it all that much.  So I quite like this method of cooking it outdoors!

  1. I love salmon and I'm sure that was some of the best looking salmon I've seen in a while!

    You should stop by for dessert when you have a moment! It will go nicely with your salmon!

  2. Oh we check it out all right and buy buy buy Copper River and Sockeye and King and every other kind of fresh salmon that gets flown into our stores.
    Bernie loves salmon so much that when we went on our Alaskan cruise he vowed to eat salmon at every meal for the entire trip. And he actually did!

    If we lived closed, he would be hanging around the smoker like a ferral cat mooching fish from the farmer.

  6. We eat a lot of salmon.....fresh caught the best! Scot smokes salmon that gets devoured quickly. Yours looks so good.

  7. From my sarcastic husband. ."that looks terrible. .I don't know how they can eat that stuff"..
    This after we have been enjoying salmon all week. We don't have a smoker but we BBQ it and eat the leftovers with fettucini ..fresh dill. .oh yum.
    Yes. .we'll come sample anytime you need a fresh pallet to decide if your recipe is bang on!

  8. Oh yum! Dear uses his smoker in the garage/shop, too. He has a friend who built a little house for his in his yard with a pull out shelf to bring out onto the covered smoker porch...

  10. No fishing friends over here, but salmon is very inexpensive in the grocery stores right now so I'm buying it and freezing it just as fast as we're eating it baked and grilled. Smoked sounds very good!

  12. It looks delicious, Judy! I'm sure it must be nice to have your husband prepare the salmon for you so all you have to do is prepare the sides. We are having a 100 degree day here today so I feel like I am "smoking" LOL

  16. It was one of Nan's favorites, but I never developed a taste for it. Must say that the herbed cheese sauce all over made it look exceptionally delish. (Anytime I'm not cooking fish, I'm a happy gal, too. Not my favorite aroma to have lingering in the house. And this is nearly sacrilege to confess for a gal from NE, but I will not cook lobster in my house. No way!

  18. YUMMY, salmon from BC and we also get Scottish salmon...Yes fresh right here in the Piedmont Triad of NC....Pays to know a fish monger!!
    And hubby's smoked salmon is the best I have ever tasted...
    Your pictures are yummy as well...I can almost smell it from here.

  19. My grandkids were complaining about the smells in Rosedale area this morning...I thought it was the chicken barn..but now I know the combined smells. It looks better on the plate than in my stomach..My last episode with salmon was not the best, but smoked salmon is always like candy.
