Chicken & Black Bean Stew...

Salads seem to have been put on hold around here...while we warm up with soups and stews. Here's a recipe from my niece, Kathryn Nickel, that we have enjoyed this past week. Kathryn is a designer/drafter and lives in Queensland, Australia. She is currently back in British Columbia...enjoying some family time.


Chicken and Black Bean Stew

1 lb. boneless chicken breasts, cut into 3/4" cubes
1 1/2 cups chopped onions
2 garlic cloves, minced
1 tsp. cooking oil


2 x 14 oz. (398 ml.) canned diced tomatoes
1 cup carrot, sliced
1 cup red or orange pepper, chopped
1 cup corn, frozen kernel (or 1 can niblets corn, drained)
1 tsp. each salt, oregano, basil
1/16 tsp. cayenne pepper
1/4 cup fresh chopped cilantro
19 oz (540 ml.) can black beans, drained
4 oz. can chopped chillies, drained

Saute chicken, onion and garlic in cooking oil, in large frying pan until onion is soft. Add remaining ingredients except black beans and chilies...bring to a boil. Cook gently, uncovered for about 30 minutes (until vegetables are soft).
Stir in beans and chillies...cover and simmer for ten more minutes.


Serve with grated cheese, sour cream and tortilla chips.

Here's a quick update on a few items...

* It seems green is the favoured colour in the tractor poll...however, no final decision has yet been made, so you can keep sending in your ballots!

* I've had some questions regarding my sister-in-law, Martha, so I thought I'd pass along what little I know. She is still undergoing tests in Vancouver, and will have the results of a CT scan today. There is a tumour in a very sensitive area of the brain...and how it will be treated still needs to be determined. So please continue to pray for Martha, and her family as they face this challenge...she so appreciates all the prayers on her behalf.

* Kris and Lisa are meeting with specialists at B.C. Women's Hospital again today to monitor the progress of their unborn little girl who has a genetic disorder called trisomy 13. We so are so thankful for all who have rallied around to support them at this difficult time. They are living one day at a time right now. I have Ranen for the day...she can light up any room with her smile!

* Kathy arrived safely aboard West Jet in the middle of a windstorm...and we'll see what we can all pack into the next week!

  5. That just kept looking better and better. By the time that it got to the cheese and sour cream, I was pretty certain that I'd have to give it a try.

    Let Martha know that she's on my ongoing prayer list. Such stressful times even when we know whose hand we hold.

    Glad that your niece and sister are home. Let the good family times roll.

  7. Hey, Judy - thanks for stopping by- I'll have to try this recipe you posted - I'm doing lots of soups and stews, too. It's very similar to Tortilla Soup that I make here in Texas, only I throw in some epazote, poblano peppers, and slices of avocado before serving. Sounds great! What time are you having dinner?   8. I love black beans anyway you fix em! My favorite is Black Bean Stack...1 scoop rice...1 scoop black beans...1 tablespoon grated cheddar...1 tablespoon onion...1 tablespoon salsa...2 tablespoons sour cream...spoon down through all and get a blended taste...oh yum!
