Almond Roca

The gifts are (mostly) wrapped...though there are a few waiting to be completed in the sewing room. The decorations are where they should be...for the most part. The Christmas music is playing...inside and out. Today I am hoping to do a little baking....since many of the things that were baked ahead of time have seemingly disappeared. The gingersnaps are gone...as are the almond roca bars. One should never start the baking too far in advance!

But what could be quicker than whipping up another batch of these tasty morsels? I'll share the recipe with you...in case you need a last minute addition to your Christmas goodie tray.

Almond Roca Bars

Ingredients:

  • graham wafers
  • 1 1/2 cups almonds, sliced
  • 1 cup butter (not margarine)
  • 1 cup brown sugar
  • 1 1/2 cups chocolate chips
Directions:
  1. Layer an 11x17-inch cookie sheet with sides with the graham wafers, cut to fit snugly.
  2. Sprinkle with the almonds and set aside.
  3. Put the butter and brown sugar in a saucepan and bring to boil, stirring to incorporate the butter.
  4. Pour in a thin stream over the almond/wafer base.
  5. Place in 350 Oven for 8 minutes until bubbly all over.
  6. Remove from the oven and sprinkle with chocolate chips.
  7. Run the tines of a fork through the chips to spread.
  8. Allow to cool and cut into squares.

These freeze well...and taste good straight out of the freezer...we have found! Enjoy.

  2. I too have all those ingredients! I love almond roca bars - glad to have another treat that's good right out of the freezer. The gingersnaps needed a good dunking in hot tea last night!
