in a pickle...

Last fall I had a few too many things on the agenda...and somehow missed the pickling cuc season.  We lamented that there would not be any homemade dill pickles this year...and the store bought ones are just not the same.  A friend suggested I try refrigerator bread and butter pickles instead...which can be made year-round with long English cucumbers.  Why not?

 
We love them...and I have made several batches this past year.  I keep a jar in the kitchen fridge...and replenish it as needed from the bucket stored in our spare fridge. 


We add them to sandwiches...eat them with crackers and cheese...or as an accompaniment for a meal.  Simple and delicious!  The roadside stands in our area have had fresh cucumbers (greenhouse grown) since February, so it's pickling season around here.   

I may just stick to my version of Bick's yum yums (click for recipe)...and forget about canning pickles in the future!   I just thought I'd pass along the tip...in case anyone else out there feels like pickling-the-easy-way.

  9. It's always good to come to another easy recipe...You may as well can in the winter while it snows...so that when it's sunny this week you can be outside again.
    They look yummy. I will try them when my shop opens up!

  10. That sounds very good...what size is an old ice cream cooler? How is it that I didn't know you had a recipe blog? Perhaps the better question is how did I forget that you had a recipe blog? Easy Peasy...that's my style perfectly.

  11. Vee...the ice-cream pails are about 1 gallon. I've taken to making a bigger batch in a slightly larger bucket. Any covered plastic or glass container will do!

    My recipe blog is a collection of all the recipes I have posted...on my own blog long ago...and on MGCC. It's mostly so I know where to find them...but I see there are lots of others using it as well.

  12. There's nothing like homemade pickles! I did a post on them last Fall. It was the first time I'd ever made pickles and now I'm hooked. We still have 2 jars . . . I'm trying to stretch them out! I'll be trying your method!

  15. Just think how much I would learn from you if I followed you around for a few months:) You continually amaze me with your virtuous life skills. I never canned a jar of pickles in my life, but I do admire those who do. That sandwich looks so good!!!

  16. Oh these are favourites at our house. I've been making them for years. I keep them in an ice cream pail in the old fridge in my garage. I think we went through 3 pails full last year. They go into almost every sandwich!

  17. This sounds like a handy recipe to keep when I buy English cucumbers at Costco! They sell them in threes and I often don't eat them fast enough so now I can preserve them. Thanks!
