peaches & cream...

Look quick, because they won’t be here much longer. We are still enjoying fresh raspberries and blackberries from the garden every day. Everbearing raspberries are wonderful…we’re planting more for next year! They produce fruit early in the season on last year’s canes; then this year’s canes begin fruiting and we eat raspberries into the fall. We’re also enjoying strawberries from our everbearing plants.

...and maybe I should consider planting more tame blackberries in our garden for next year. They are definitely the way to go! They don’t reach out and grab you as you walk by. We have only one bush, so it’s mostly for fresh eating and a little baking. Not enough for this pie ...it was brought to us by a friend the other day & it was yummy!

But how about a fresh peach pie? We’ve got family visiting from the Okanagan this weekend, so we are also enjoying the ‘fruit of their vines’. They brought us peaches…incredibly juicy & delicious! Here's a family favorite fresh fruit pie, which we shared with our guests last night:

Fresh Peach Pie
1 cup water
1 cup sugar
1 tablespoon corn syrup
3 tablespoons cornstarch
3 tablespoons peach jello

5-6 cups fresh peaches, sliced

1 baked piecrust (9 or 10 inch)

Mix water, sugar & cornstarch in saucepan and boil until thickened. (I usually omit the corn syrup and I boil the glaze in the microwave rather than on the stovetop). Remove from heat and add the peach jello powder.


Cool until lukewarm; stir in peach slices and pour into prepared crust. Refrigerate for at least 2 hours. Serve with a dollop of whipped cream.

  1. Congratulations on your first mouth watering post. This peach pie is also one of our favorites. I always waste precious time debating between baking the peaches in the pie or filling the pie crust. They are both fantastic.
    Your berry and grape pics are really nice.

  3. Well, Tim, here's a few extra steps for Heidi.
    1. She will have to stay at home for a minimum of one hour.
    2. She can also purchase the pie crust...it just needs baking.
    3. And did I mention that the peaches need to be peeled...she doesn't like peeling anything, so that would be your job.
    4. The 'dollop' of whipped cream also takes time, so maybe just buy a tin of that squishy cream.

    Hope you get your peach pie!

    PS Maybe it would be simpler for you just to get the Airport Coffee Shop to make you a pie.

  4. yeah, the airport cafe does sound a little simpler. Every once and awhile I find myself motivated and filled with good baking intentions but it usually (er, always) ends up to be a disappointment. what can I say. At least I figured out how to cook somewhere along the line. Cooking's a little, freer - baking's a lot easier to screw up.
