Classy Turkey Casserole

Once the turkey dinner is all cleaned up, there's always the problem of what to do with all that leftover turkey. It's a good problem! I used the last of our turkey yesterday to make a turkey & broccoli casserole...it's smothered in a mild curry sauce and baked under a layer of cheese. If you've ever had the 'Chicken Broccoli Cheese' dinner at the White Spot Restaurant, this is somewhat similar. It's actually an adaptation of the Classy Chicken recipe in the Best of Bridge cookbook.

Classy Turkey Casserole

3 cups cooked turkey pieces
3-4 cups broccoli pieces, cooked until tender crisp
1/4 teaspoon pepper
1-10 oz. can cream of chicken (or mushroom) soup
1/2 cup light mayonnaise
1 tsp. curry powder
1 tsp. lemon juice
1/2 - 1 cup grated cheddar cheese

Butter a casserole dish or 9 x 13 inch pan. 
Arrange broccoli and turkey pieces in the bottom and sprinkle with pepper. 
Mix together soup, mayo, curry and lemon juice and pour over turkey and broccoli.
Sprinkle with cheddar cheese and bake at 375F for about 35 minutes.

Serve with rice and a green salad.

That's all there's to it! It's quick, easy and delicious.

If you're cooking a turkey next week, be sure to buy one that will guarantee you some leftovers...it will make for easy meals once you're done with the BIG one! One of these days I'll post a turkey-corn chowder that is also a family favorite.

    This recipe looks awesome. Guess what I will be doing with my leftovers.

    Won't be able to go to the KEG every night so this looks like a great option for next week.

    I notice that your lovely header avoided the shrink cycle .. hmm, I'm glad for you.

    So, you don't clean on Saturdays? Oh, you are so smart to do it on another day, I wish I had too.

  5. I'll eat anything with Brocoli...or Brussel Sprouts...my husband says I've got rabbit blood...that really sounds delish, can't wait to try it!
